Mama's Egg Salad

This isn't a true recipes...more of a list of ingredients used to make Egg Salad in our house. Quantities all depend on the number of eggs used, goal is to keep it from being runny so add slowly!

Two Eggs usually makes 3 sandwiches:

2 hardboiled eggs
1 large kitchen spoonful (1/4 cup?) Mayonaise
Dash of seasoned salt
Sprinkle of dry mustard (or 1 tsp regular mustard)
few shakes of Onion flakes or dried minced onion or onion powder (maybe just one little shake of powder)
Sprinkle of garlic powder
Optional - Accent (msg) use to use this in the old days...

Mix it all up, adjust seasonings to taste and refrigerate at least 1 hour for flavors to blend.

You can use the same "formula" for potato salad - just add red potatoes and real onion.

Veggie Burgers

INGREDIENTS:

1 Tbsp canola oil, divided
1/4 cup minced onion
1/4 cup minced bell pepper
1/4 cup minced carrot
1/4 cup minced celery (or mushrooms)
2/3 cup drained canned white kidney beans (cannellini)
1 egg, lightly beaten
1/3 cup seasoned dried bread crumbs

DIRECTIONS:
  1. in 8-inch nonstick skillet heat 1 teaspoon of the oil. Add onions, pepper, carrot, and celery (mushroom); cook over medium heat, stirring occasionally, until vegetables are soft and moisture has evaporated, about 1 minute. Set aside to cool slightly.
  2. Using a fork, in medium mixing bowl mash beans; stir in egg. Add bread crumbs and vegetable mixture; mix until thoroughly combined.
  3. Shape mixture into 4 equal patties. Set patties on plate; cover and refrigerate until chilled, at least 20 minutes. (can also freeze at this point and store for future use)
  4. In same skillet heat 1 teaspoon of the remaining oil. Add 2 patties; cook over medium heat, turning once, until browned on both sides and heated through. Remove patties to plate; keep warm. Repeat with remaining teaspoon oil and 2 patties.

Bacon Jack Chicken Sandwich

Ingredients

  • 8 slices bacon
  • 4 skinless, boneless chicken breast halves
  • 2 teaspoons poultry seasoning
  • 4 slices pepperjack cheese
  • 4 hamburger buns, split
  • 4 leaves of lettuce
  • 4 slices tomato
  • 1/2 cup thinly sliced onions
  • 12 slices dill pickle

Directions

  1. Preheat a grill for medium heat.
  2. While the grill preheats, place the bacon in a large skillet over medium-high heat. Cook until browned on both sides. Remove from the pan, and drain on paper towels.
  3. Rub the poultry seasoning onto the chicken pieces, and place them on the grill. Cook for about 6 minutes per side, or until no longer pink in the center. Top each piece of chicken with 2 slices of bacon and 1 slice of pepperjack cheese. Grill for 2 to 3 more minutes to melt the cheese.
  4. Place each piece of chicken on a bun, and top with lettuce, tomato, onion and pickle slices before serving with your favorite condiments.
